The typical South Tyrolean Krapfen cannot be compared with doughnuts. In South Tyrol they are filled with poppy seed, chestnut, plum or apricot jam. The thin pastry is made of rye and wheat flower, eggs, cream, butter, oil, milk and salt. The Krapfen are fried in hot oil.
